Mountain View Kale

Unseasonably mild weather in the winter of 2006-7 allowed kale (one of the most nutritious vegetables) plants to continue to grow into January. Fascinated by their textures, I used two varieties in this composition – dinosaur and curly. Mountain View Farm in Easthampton is a Community Supported Agriculture farm, (people purchase shares and get produce weekly during the growing season) whose land (with views of Mt. Tom) is permanently protected for agricultural use. Locally grown produce...always the best! For scanning and eating.
